- Cut the burdock root into long, thin shavings and soak in water. Julienne the carrot. Mince the green part of the green onion.
- Pour oil into a large frying pan or pot. Stir-fry the ground meat. (If the pan is too small, it will be very hard to mix when other ingredients are added!)
- When it's mostly heated through, add the vegetables and sugar and quickly stir-fry.
- Once the vegetables become slightly tender, add the water and seasonings. After it comes to a boil, let it simmer for 2-3 minutes.
- Add the okara. Spread it evenly in the pan and mix vigorously. I got carried away and made double the amount–it was really hard to mix.
- All done! When you taste it at first, the flavor may be a little bland, but let it sit for awhile and the flavors will absorb and it'll turn out perfectly!
- If there's not enough liquid, making it hard to mix, add water to adjust. If you want to add more seasonings, mix with water first and then add them.
